For over 20 yearsFrom the Valley to the Mountain

When Agnes and Erwin Koch set out for their first day of work at an altitude of over 3,000 meters in October 2003, they had no idea that the restaurant high above Corviglia would become much more than just a place of work. Today, twenty years later, one thing is clear: Piz Nair is like a second home to the hosts. The two realized relatively early on that running a restaurant on St. Moritz’s local mountain is anything but ordinary. “The biggest challenge is definitely the weather—the entire schedule depends on it,” they say from experience. But it’s not just storms, rain, snow, and the like that they have to take into account. For example, transporting ingredients from the valley up the mountain requires a great deal of organizational skill. But after two decades, nothing surprises the hosts anymore: “Whether it’s last-minute closures due to strong winds or avalanche danger, combined with blasting operations and securing the slopes—we’ve seen it all.” The example of the popular gnocchi shows just what else—besides a dash of flexibility—it takes before a dish can be served to hungry guests at the Piz Nair 10,000 Feet restaurant.

From the magazine into the kitchen

When gnocchi are on the menu, the kitchen team retrieves the required amount of potatoes from storage. The potatoes meet organic standards and are thoroughly inspected before processing. If they meet Erwin Koch’s standards, the potatoes are thoroughly washed and then cooked in a pressure steamer. From the steamer, they are transferred to the oven, where they can dry before being left to rest in the refrigerator for 24 hours.

After resting, the potatoes are in for a bit of a workout: Next up is mashing. This involves pressing the cooked potatoes through a fine-mesh sieve, which creates a purée. Erwin Koch and his team mix this with ingredients like eggs, flour, or ricotta; but the most important ingredient, by far, is: lots of love! Once the mixture is perfect, it’s time to knead. The soft but well-bound dough—similar to choux pastry—can be worked with immediately without any resting time.

Bun appetite

Place the dough on the work surface and shape it into rolls in batches. Use a spatula to cut the rolls into equal-sized pieces and dust them with flour. This helps prevent the round pieces from sticking together. Meanwhile, a pot filled with water begins to boil on the stove. When the gnocchi are ready, drop them into the hot water. As soon as they hit the water, they’ll float to the surface after just a short time. Once fished out of the water, lightly sauté them in a pan with a little walnut oil, walnuts, and sun-dried tomatoes. When they’ve turned a beautiful golden yellow, arrange them on a plate, generously garnish with fresh Parmesan shavings, and serve: bun appetit!
