Raclette is lactose-free and does not contain gluten. Due to the natural production of the cheese and the long maturation, the lactose is completely broken down. Why does raclette cheese not contain lactose? The natural cultures added during cheese production are specialized in breaking down lactose. After just 24 hours, most of the lactose is converted into lactic acid. After the cheese has matured for at least three months, the remaining milk sugar is used up.
